Is the white version the same as the black one?
Yes. Same dimensions, fans and clearances; only the colour and part number differ.
Can I keep the 180mm fans and add a 360mm radiator?
No. A 360mm radiator replaces the front 180mm fans, and the top takes only 140mm or 120mm fans. To keep the 180mm intakes, fit a 280mm or 240mm radiator on top.
What is the maximum CPU cooler height?
170mm, which suits most tower air coolers.
